🧂 Ingredients
- 1kg mixed dried fruits
- 150g glacé cherries
- 250g butter
- 200g dark brown sugar
- 4 large eggs
- 250g all-purpose flour
- 2 tsp mixed spice
- 100ml brandy (plus extra for feeding)
- Zest of 1 lemon and 1 orange
📝 Instructions
- Soak fruits overnight in brandy
- Preheat oven to 140°C/280°F
- Cream butter and sugar until light and fluffy
- Add eggs one at a time
- Fold in flour and spices
- Stir in soaked fruits and zests
- Bake for 3-3.5 hours
- Feed with brandy weekly until Christmas
