Christmas Fruitcake

🧂 Ingredients

  • 1kg mixed dried fruits
  • 150g glacé cherries
  • 250g butter
  • 200g dark brown sugar
  • 4 large eggs
  • 250g all-purpose flour
  • 2 tsp mixed spice
  • 100ml brandy (plus extra for feeding)
  • Zest of 1 lemon and 1 orange

📝 Instructions

  1. Soak fruits overnight in brandy
  2. Preheat oven to 140°C/280°F
  3. Cream butter and sugar until light and fluffy
  4. Add eggs one at a time
  5. Fold in flour and spices
  6. Stir in soaked fruits and zests
  7. Bake for 3-3.5 hours
  8. Feed with brandy weekly until Christmas
💡 TIP: Make this cake at least 6 weeks before Christmas to allow flavors to mature.
