Christmas Pudding

🧂 Ingredients

  • 450g mixed dried fruit
  • 150g candied peel
  • 175g sultanas
  • 175g raisins
  • 150g suet
  • 150g breadcrumbs
  • 85g flour
  • 150g dark brown sugar
  • 3 eggs
  • 1 cooking apple, grated
  • 2 tbsp mixed spice
  • 150ml brandy
  • Zest of 1 lemon and 1 orange

📝 Instructions

  1. Mix all dried fruits and soak in brandy overnight
  2. Mix remaining ingredients in a large bowl
  3. Stir in soaked fruit mixture
  4. Grease a 1.5L pudding basin
  5. Fill basin with mixture
  6. Cover with greaseproof paper and foil
  7. Steam for 8 hours
  8. Store in a cool place
  9. Steam for 2 hours before serving
💡 TIP: Make this pudding at least 6 weeks before Christmas. Feed weekly with a tablespoon of brandy!
